As a kid, I always requested the blueberry syrup at pancake restaurants because I adored the intense blueberry flavor on top of classic pancakes.

As I’ve gotten older, I have realized that this syrup was all flavor and no real blueberry… or maple syrup, for that matter.

Pancakes are one of my family’s favorite breakfasts, and I have spent years perfecting my pancake game. And I’m thrilled to say that I’ve found a way to get this decadent blueberry syrup recipe that I loved as a kid from scratch with real ingredients.

Why I love this recipe

One of the things I like to have whenever I serve pancakes is fun garnishes and toppings… and an at-home infused maple syrup is an easy way to step up the flavor game.

This Blueberry Pancake Syrup bursts with blueberry flavor. It’s naturally sweetened with real blueberries, wonderfully sweet and is the perfect pairing for fluffy pancakes, waffles and more.

If you’re a blueberry fan, you’ve GOT to give this recipe a try. Please note that this is different than a blueberry sauce or a blueberry compote.

    Let’s talk ingredients!

In addition to the tools above, you’re going to need some ingredients to make this recipe, too! Chances are, you might already have some of them in your fridge or pantry. Scroll down to the recipe card for the full measurements and instructions.

Here are the simple ingredients that you need to get at the grocery store.

    • Blueberries — you can use fresh or frozen for this recipe since we’re adding them to directly to the syrup. Wild blueberries would be a lovely addition to this recipe, too.
    • Maple syrup — make sure to purchase the real deal. Any grade of 100% maple is fine, though, so don’t fret about the color. Organic maple syrup is awesome, but it’s not necessary.

While you could add a splash of fresh lemon juice or a splash of vanilla extract, you do not need these, and I did not include these additional ingredients in my recipe.

    The best maple syrup

While it’s easy for me to tell you that Grade A maple syrup is the best, there is actually even more nuance to choosing a maple syrup. In fact, there is no Grade B — it was re-classified by the USDA in 2015.

Here are the standard grades of maple syrup, graded on color, clarity, density and flavor intensity:

    • Golden color, delicate taste: This has a light yellow gold color with a mild and delicate flavor. It’s best for pancakes, waffles and French toast.
    • Amber color, rich taste: This one has a darker color with a rich maple flavor. It’s a great all-around syrup for toppings, cooking and baking. Try it in maple butternut squash.
    • Dark color, robust taste: This syrup has a deep amber color and a strong maple flavor. Use it anytime you want a bolder flavor, like in sauces, glazes or cocktails. Try it with this maple bacon recipe.
    • Very dark color, strong taste: The darkest color has the most intense flavor. It’s mostly used in cooking when you want the maple flavor to stand out, like BBQ baked beans.

How to make Homemade Blueberry Syrup

This fresh Blueberry Pancake Syrup is so incredibly simple to make.

Measure out the maple syrup (again — purchase the real deal stuff and not the maple-flavored syrup) and blueberries in a medium or small saucepan.

Heat the ingredients over medium heat until they reach a low boil.

Watch the blueberries and when they burst, your syrup is done.

    Pro tip!

If you don’t mind blueberry chunks, feel free to serve the syrup like this. If you want a smooth syrup, pour the ingredients into a food processor or blender and blend until smooth.

You can make this in advance or put it together while pancakes cook. Just make sure it’s ready to drizzle on top of stacks of pancakes!

    How to store:

Store the cooled syrup in a mason jar or another airtight container in the refrigerator for up to two weeks. Reheat when ready to serve.

    Erin’s Easy Entertaining Tips

I absolutely love pancakes for an at-home brunch, and offering a special, blueberry-infused syrup is a solid move!

Real talk: pancakes for brunch take a little planning and patience, and they can absolutely be done and are a great way to share a favorite recipe with people you care about.

Here’s what I would do if I were planning to serve this syrup with brunch:

    • Depending on the amount of people you’re serving, you can double this recipe. You can also half it if you’re not feeding a crowd.
    • Make the syrup before guests arrive. Plan to reheat it in the microwave before serving to guests so it’s beautifully warm.
    • Transform your table into a pancake bar! Offer various pancake toppings, like this syrup, as well as regular maple syrup, sweetened whipped cream (or strawberry whipped cream) and fresh fruit. (You can even make them into a Pancake Board if you’re feeling creative!)
