Cube sweet potatoes, then douse them in a mixture of butter and bourbon. Season them with fresh thyme, salt and pepper and bake for 45 minutes. Broil the potatoes to add a nice crunch, then serve warm. This bourbon-y, buttery side dish is holiday meal perfection.

Ingredients
4sweet potatoescubed (~3.25 lbs.)
4tablespoonsunsalted butter
2oz.bourbon
1teaspoonfresh thymechopped (or ½ teaspoon dried thyme)
½teaspoonkosher salt
½teaspoonblack pepperfreshly ground
Instructions
Preheat the oven to 350°F. Line a baking sheet with parchment paper or a nonstick baking mat. Set aside.
Cube the sweet potatoes. Transfer them into a large bowl. Set aside.
In a microwave-safe dish, heat the unsalted butter until melted. Add the bourbon to the butter.
Pour the bourbon butter over the sweet potatoes. Using a spoon, toss the potatoes with the bourbon butter until all are coated.
Season the sweet potatoes with the thyme, salt and pepper.
Transfer the potatoes to the prepared baking sheet. Spread them until evenly distributed.
Place the baking sheet into the preheated oven. Bake for 45 minutes.
Turn on the broiler. Broil the sweet potatoes for an additional 5-10 minutes, or until the sweet potatoes are golden brown and delicious.
