Cucumber Finger Sandwiches with Feta and Cream Cheese Spread
These aren't your mama's Cucumber Finger Sandwiches! These sandies are a twist on the classic baby and bridal shower finger food. Instead of the traditional mayonnaise-based spread, this recipe calls for a whipped feta and cream cheese spread, studded with dill. Cut your thinly sliced bread into the desired shape, slather with the whipped feta and cream cheese spread, top with a English cucumber slice, sprinkle with dill, and you're good to go!

Ingredients
Whipped Feta and Cream Cheese Spread
½cupfeta cheese
1oz.cream cheesesoftened
¼teaspoondill
1 ½tablespoonsextra virgin olive oilpossibly a little more, depending on the consistency of your spread

1loafthinly sliced sandwich breadtoasted
1English cucumbersliced into rounds

Instructions
Make the Whipped Feta and Cream Cheese Spread
In the base of a food processor, combine the feta cheese, cream cheese, dill and olive oil.
Blend until combined, drizzling in more olive oil if the mixture is too thick. It should be creamy and smooth.
Make the Sandwiches
Cut your thin sandwich bread into whatever desired shape you’d like these sandwiches to be. Toast.
When the bread has cooled slightly, slather it with the Whipped Feta and Cream Cheese Spread.
Top the spread with a round of cucumber.
Sprinkle dill on top of the cucumber.
Repeat until all the sandwiches have been made.
Serve at room temperature, and enjoy!
Notes
This recipe can be doubled or tripled, depending on how many people you want to serve. This rendition of it will serve 4-6 easily, though it’s dependent on other food that is around. If this is the main appetizer, double the recipe.
