Ingredients
1bunch carrots
2tablespoonsextra virgin olive oil
2tablespoonshoney
Salt and pepperto taste
Cayenne pepperfor dusting
Instructions
Preheat the oven to 400°F. Spritz a rimmed sheet pan with nonstick baking spray, and set aside. (You could also line the sheet pan with parchment paper.)
Remove the stems from the carrots. Peel with a vegetable peeler. Place in a large bowl.
Pour the olive oil and honey over the carrots. Season with salt and pepper. Toss to coat.
Transfer the carrots to the prepared sheet pan.
Sprinkle the cayenne pepper over the carrots. (Be careful with this—a little goes a long way.)
Bake in the preheated over for 25 minutes, or until fork tender.
