Ingredients
Mint Simple Syrup
½cupwater
½cupgranulated sugar
1large bunch fresh mint
Peach Julep Popsicles
10oz.peachesfresh or frozen
2 ½oz.bourbon

Instructions
Make the Mint Simple Syrup
In a heavy-bottomed saucepan, combine the water and sugar.
Heat over medium-high heat until the sugar has completely dissolved into the water.
Remove from the heat, and add the mint.
Let the ingredients steep for 30 minutes, then strain and set aside.
Make the Popsicles
In the base of a blender, combine the peaches, bourbon and mint simple syrup.
Blend until smooth.
Pour into popsicle molds, then freeze overnight (or until frozen solid.)
Serve cold, and enjoy all summer long!
Notes
Do not add additional alcohol to the popsicles. I know it’s tempting, but in my first attempt at this recipe, I added 4 oz. of bourbon. Every popsicle broke when I tried to pull them out of the molds because they were a slush consistency.
