Ingredients
Roasted Grapes
1bunch red grapesrinsed
2tablespoonsextra virgin olive oil
Kosher salt
Black Pepper
Whipped Feta Spread
1cupfeta cheese
6tablespoonsextra virgin olive oil
½teaspoonblack pepper
1small orangezested
Bruschetta
1loaf sourdoughsliced into ½” thin slices and toasted

Instructions
Roast the Grapes
Preheat the oven to 400°F.
Line a baking sheet with parchment paper.
Place the rinsed and patted dry grapes onto the parchment paper.
Drizzle with olive oil, then season with salt and pepper.
Roast for 25 minutes, then turn up the oven’s temperature to 450°F. Roast an additional 10 minutes.
Remove from the oven, and let cool.
Prepare the Whipped Feta Spread
In the food processor, measure out the feta cheese, olive oil, pepper and orange zest.
Process until smooth.
Set aside.
Make the Bruschetta
Place out the toasted slices of bread.
Using a knife, smear the Whipped Feta onto the bread.
Top the feta with a few roasted grapes, removed from the stem.
Zest a little orange zest on top of the bruschetta.
Repeat until all the bread slices have been prepared.
