Instructions
Make the Strawberry Syrup
Blend strawberries until smooth in a blender.
Strain the strawberries over a small saucepan with a fine mesh strainer.
Stir sugar for the syrup into the saucepan and bring to a boil over medium-high heat.
Cook, stirring constantly, until the sugar dissolves. Remove from heat and cool completely before using in the cocktail.
Make the French Monaco
Set out two tall cocktail glasses.
Add 1 oz. simple syrup and 1 oz. lemon juice to each glass. Stir until combined.
Stir in 1 ½ oz strawberry syrup into each glass. Top each glass with 6 oz light lager, stirring to combine.
Garnish with a lemon twist and serve immediately.
Notes
Make the strawberry syrup in advance, and keep it in the refrigerator for up to a week.
